Strawberry Pretzel Summer Dessert
Ready In: 45 mins
Serves: 18
Ingredients:
Pretzel Crust Layer:
- 2 cups crushed pretzels
- 3⁄4 cup butter, melted
- 3 tablespoons white sugar
Cream Filling Layer:
- 1 (8 ounce) package cream cheese, softened
- 1 cup white sugar
- 1 (8 ounce) carton frozen whipped topping, thawed
Strawberry Layer:
- 2 (3 ounce) packages strawberry gelatin
- 2 cups boiling water
- 2 (10 ounce) packages frozen strawberries
Directions
- Preheat oven to 400°F.
- Stir together crushed pretzels, melted butter and 3 tablespoons white sugar; mix well and press mixture into bottom of 9×13-inch baking dish. Bake 8-10 minutes, until set; set aside to cool.
- In a large mixing bowl cream together cream cheese and white sugar. Fold in whipped topping. Spread mixture onto cooled crust.
- Dissolve gelatin in boiling water. Stir in frozen strawberries and allow to set briefly. When mixture is about the consistency of egg whites, pour and spread over cream cheese layer.
- Refrigerate until set.
Auxiliary Report
The Chapter Picnic is right around the corner! Come join your CLCA family at the Chapter Picnic at Cuesta Park in Mountain View on Sunday, September 8, starting at 11 a.m. All are welcome. The horseshoe tournament will start promptly at 11 a.m., with a barbecue lunch at 12:30 p.m. Thank you to our Picnic Committee (Chair Rick Camin, Alice Domine, Vicky Parrott, Michelle Ott, Cindy Singletary, Girvin and Lesley Peters, and Charlene Ott) for putting this event together.
Games for all ages will be available throughout the day. Start practicing your horseshoe skills. Ed and Jonathan Ott are still the team to beat. Although they received a lot of competition, Ed and Jonathan prevailed in 2023, with Nico and Alex Domine coming in second. I have a feeling a Domine team is anxious to reclaim the trophy or maybe it’s the newcomers, Jackie Marsey and Dominic Bryan!
Dust off your recipes! The dessert competition is back, as well as the chili cook-off. We have some awesome bakers and cooks in this group, young and old, and it is refreshing to see old family recipes being passed down to the next generation. A reservation form is online and a Constant Contact invitation will also go out soon. Pricing is the same as last year, $10 for adults and kids 12 and over, $5 for children under 12.
A day filled with great food, great fun, and great friends. How could you go wrong with this combination? I look forward to meeting new people and welcoming friends to the picnic on September 8.
